Chia Pudding Parfait

I’m always looking for healthy breakfast and snack options that not only provide the nutrition my body needs but that are also quick easy to make.

Chia seeds have become increasingly popular over the years as they’ve become known as a superfood.  They’re the edible seeds of a flowering plant in the mint family and were an important part of the Aztec diet back in the day.

Chia seeds are a great source of fibre, protein and healthy fats (mostly Omega-3 fatty acids). Just 2 tablespoons of chia seeds contains roughly 4 g of protein, 11 g of fibre, 7 g of unsaturated fat (considered the best plant source of Omega-3 fatty acids). Chia seeds are also a complete protein source, which means they contain all nine essential amino acids (‘essential’ means they cannot be made by the body).

This Chia Pudding recipe takes only a few minutes to make. I recommend making a double batch ahead of time (I like to take 5 mins the night before) to give you a few snacks or breakfasts for the week.

Ingredients:

  • 1/2 cup of chia seeds

  • 2 cups of full fat coconut milk

  • 1 tsp of vanilla

  • 2 tbsp of maple syrup or honey

Directions:

Mix all of the ingredients together in a bowl and cover and place in the fridge overnight or for minimum 3 hours.

I like to top this off with fruit, coconut yogurt (I highly recommend Yoggu coconut yogurt because its super rich and creamy), bee pollen, hemp oil, pumpkin seeds and even some granola if I’m having this for breakfast.
