Lemon Coconut Collagen Drops

These lemon coconut bites are perfect for a quick and healthy snack. Although I LOVE chocolate it’s nice to switch things up every now and then. These will satisfy your sweet tooth without the sugar crash. I love adding in the collagen for the added skin benefits.

These bites are gluten free, refined sugar free and vegan.

Ingredients:

  • 3/4 cup Almond Flour

  • 1/2 cup Coconut, shredded

  • 1 tbsp Cashew Butter

  • 1 scoop Collagen

  • 2 tbsp Lemon Juice

  • 1 tsp honey

  • Zest of 1 Lemon

Directions:
Place all ingredients into a food processor and blend until well mixed.
Roll into tiny balls and roll into some shredded coconut.
Makes approximately 7 balls.
