Chocolate Banana Pudding

I'm an absolute chocolate lover so I'm always looking for ways to incorporate chocolate into my day. This recipe is a healthy alternative to those packaged chocolate puddings in the grocery store (I loved having those Magic Moments puddings in my lunch as a kid). This chocolate pudding recipe is rich and creamy and ridiculously easy to make.

When you're picking up the ingredients for this, try to purchase cacao powder (which is raw chocolate) vs. cocoa powder (which is processed).  Raw cacao powder contains fiber, magnesium, and iron–so don't feel bad having chocolate in your life–only good stuff in there for ya!

This recipe is refined sugar-free, using pure maple syrup to sweeten, which also happens to contain beneficial minerals. The avocado in this recipe not only gives this pudding it's thick and creamy texture but it's also a great source of healthy (monounsaturated) fat, fiber, vitamins, and minerals. It's so important to get enough healthy fats into our diet each day–Monounsaturated fats found in avocados have been shown to help brain function, and help to lubricate the skin (yay for glowing skin!). 

RECIPE:
Serves 2

Ingredients:

  • 2 ripe hass avocados (skin and pit removed)

  • 1/4 cup raw cacao powder

  • 1/2 banana

  • 1/4 cup pure maple syrup

  • 2 tbsp. almond butter

  • 1 tbsp. almond milk

  • 1 tsp. vanilla 

Directions:

Combine these ingredients in a blender or whisk together in a bowl until smooth. Refrigerate for an hour and enjoy!
